Ingredients
Cake
- 1 box Yellow Cake Mix
- 15 oz Pumpkin Puree (Trader Joe's Organic)
Icing
- 3 tbsp Apple Cider
- 1½ cups Powdered Sugar
- ¾ tsp Pumpkin Pie Spice

- Spatula
- Stand Mixer (or Hand Mixer)
- 9x13-inch Baking Pan
- Mixing Bowl
- Measuring Cups & Spoons

Instructions
Prep Work
- Preheat the oven to 350℉
- Spray cooking spray into the 9x13 pan, covering the sides & bottom of the pan
Make the Cake
- Combine the cake mix and pumpkin puree into the mixer, and mix until blended together nicely (it will be thick!)
- Pour the batter into the sprayed pan and bake for 28 minutes and then remove it from the oven to rest
Make the Icing
- Mix together the apple cider, powdered sugar and pumpkin spice until well incorporated
- Once the cake has cooled enough, pour the icing over the cake and spread it out evenly
Notes
- Do not overbake this cake. As long as you can stick a toothpick in the center and it comes out clean, remove it from the oven.
