This cake is incredibly moist and an excellent fall dessert that is so easy to make.

Ingredients
  

Cake
  • 1 box Yellow Cake Mix
  • 15 oz Pumpkin Puree (Trader Joe's Organic)
Icing
  • 3 tbsp Apple Cider
  • cups Powdered Sugar
  • ¾ tsp Pumpkin Pie Spice

Equipment

  • Can Opener
  • Spatula
  • Stand Mixer (or Hand Mixer)
  • 9x13-inch Baking Pan
  • Mixing Bowl
  • Measuring Cups & Spoons
  • Cooking Spray

Instructions

Prep Work
  1. Preheat the oven to 350℉
  2. Spray cooking spray into the 9x13 pan, covering the sides & bottom of the pan
Make the Cake
  1. Combine the cake mix and pumpkin puree into the mixer, and mix until blended together nicely (it will be thick!)
  2. Pour the batter into the sprayed pan and bake for 28 minutes and then remove it from the oven to rest
Make the Icing
  1. Mix together the apple cider, powdered sugar and pumpkin spice until well incorporated
  2. Once the cake has cooled enough, pour the icing over the cake and spread it out evenly

Notes

  • Do not overbake this cake. As long as you can stick a toothpick in the center and it comes out clean, remove it from the oven.
